I wonder what chapters 2 and 3 will be about, considering Yamcha will no doubt be dead by the end of the first.

I suppose that makes sense. Chapter 1 did jump from the end of the Pilaf Saga to Yamcha soloing the Saibamen -- with that kind of pacing, three chapters sounds about right.
