Would you? It's been a steady $ource of income for them ever since it aired in 1995. They won' t let it go that easily.

I guess this new proyect has been greenlighted after the success of the third Rebuild film.

video game? maybe?
i feel thats a possibility as recent examples of such games show it can be done.

but i'm placing my bets on a OVA series bundled together with a rehash or the revived manga, or a light novel which focuses on the lore around evangelion

Well, given that it was announced in a manga anthology, it'll almost certainly be manga.

Maybe it will be a new version of the story, made with today's trends in mind.
